Ingredients:

Dry Mix:

  • 100g sunflower seeds
  • 50g pumpkin seeds
  • 50g sesame seeds
  • 30g walnuts, slightly chopped
  • 30g hazelnuts
  • 60g flaxseed
  • 20g chia seeds
  • 20g psyllium husk
  • 200g rolled oats
  • 1 teaspoon salt

Wet Mix:

  • 1 can (380g) of white beans, rinsed
  • 170ml water
  • 30ml vegetable oil

Instructions:

  1. Prepare Dry Ingredients: In a large mixing bowl, combine sunflower seeds, pumpkin seeds, sesame seeds, chopped walnuts, hazelnuts, flaxseed, chia seeds, psyllium husk, rolled oats, and salt. Stir until well mixed.
  2. Blend White Beans: In a blender, blend the white beans until smooth. Transfer to a separate bowl.
  3. Combine Wet Ingredients: To the blended beans, add water and vegetable oil. Mix thoroughly until you have a smooth liquid mixture.
  4. Create the Batter: Pour the wet mixture into the bowl with the dry ingredients. Stir until all components are fully integrated, forming a cohesive batter.
  5. Prepare Jars: Grease the insides of wide-neck jars with a bit of oil to prevent sticking. This also helps in easier removal of the bread once baked. If you don’t have wide-neck jars, consider using a different type of heatproof casserole dish that’s greased.
  6. Fill Jars: Divide the batter evenly among the prepared jars, leaving some space at the top for the bread to expand. Close the lids lightly (or cover with foil if using a casserole dish).
  7. Bake: Preheat your oven to 200°C (392°F). Place the jars on a baking tray and bake for 60-70 minutes, or until the bread is cooked through and has a firm, crusty top.
  8. Cool and Enjoy: Allow the bread to cool before attempting to remove it from the jars. For jars with narrower necks, you might need to eat the bread directly from the jar, which can be its own unique experience!

Note:

This Nut & Seed Jar Bread combines the hearty flavors of nuts and seeds with the convenience of baking in jars for a unique presentation. The blend of textures and the natural, wholesome taste make it a delightful and healthy option for any meal. Remember to use wide-neck jars for easy removal or opt for a different baking dish as needed. Enjoy the delicious aroma and taste of freshly baked, natural bread with this simple recipe.
