  • 2 large celery stalks, cut into large chunks
  • 1 bay leaf
  • 2-3 tablespoons vegetable or canola oil
  • 2 tablespoons cornstarch + 2 tablespoons water for slurry (optional)

For the sauce:

  • 4 scant teaspoons seasoned salt
  • 3 tablespoons packed brown sugar
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon yellow mustard or mustard of choice
  • 3/4 teaspoon black pepper
  • One 14.5-ounce can of low-sodium beef broth
  • 1/4 cup water


  1. Prepare the Steak:
    • Preheat your oven to 325°F (163°C).
    • Season the chuck steak with 1/4 teaspoon of salt and 1/4 teaspoon of black pepper.
  2. Sear the Steak:
    • In a large oven-safe pot or Dutch oven, heat the vegetable or canola oil over medium-high heat.
    • Add the seasoned chuck steak and sear on both sides until browned, about 4-5 minutes per side. Transfer the steak from the pot and place it aside.
  3. Sauté the Vegetables:
    • In the same pot, add the carrots, onions, garlic, and celery. Cook for approximately 5 minutes until the vegetables become tender.
