Garlic & Coriander Flatbreads Recipe

  • 2 cups (250g) strong white bread flour: Plus additional for kneading. The strong flour helps develop the gluten, making the flatbreads soft and chewy.
  • 1 teaspoon salt
  • 1 teaspoon fast-acting instant yeast
  • 1 tablespoon butter, softened: Adds richness to the dough.
  • 2 tablespoons Greek yogurt: Provides moisture and a slight tang.
  • 150 ml cool water: *Start with less and add more as needed to form a soft, pliable dough.
  • 2 tablespoons butter, melted: For brushing on the cooked flatbreads.
  • 2 teaspoons garlic puree: Infuses the flatbreads with a bold garlic flavor.
  • 2 – 3 teaspoons chopped coriander (cilantro): Adds a fresh, herby note.

  1. Dough Preparation:
    • In a large mixing bowl, combine the strong white bread flour, salt, and instant yeast. Add the softened butter and Greek yogurt, mixing until crumbly.
    • Gradically add the cool water, mixing until a soft dough forms. You may not need all the water, so add it slowly until the dough is pliable and not too sticky.
