Ingredients:

  • Puff pastry: 400 g
  • Egg whites: 3
  • Sugar: 10 g
  • For the cream:
    • Milk: 500 ml
    • Egg yolks: 3
    • Sugar: 50 g
    • Starch: 50 g
    • Butter: 50 g
  • Whipping cream: 150 ml
  • Blueberry jam: 200 g

Instructions:

  1. Prepare the Pastry:
    • Roll out the puff pastry to fit a tray of 35 x 40 cm. Prick the pastry with a fork to prevent it from puffing up too much.
    • Beat the egg whites until frothy, then gradually add 10 g of sugar, continuing to beat until stiff peaks form.
    • Spread this mixture over the pastry evenly.
    • Bake in a preheated oven at 180°C (356°F) for about 20 minutes, or until golden brown. Allow to cool.
  2. Make the Cream:
    • In a saucepan, heat the milk until it’s about to boil. In a separate bowl, whisk together the egg yolks, 50 g of sugar, and starch until smooth.
    • Gradually add the hot milk to the yolk mixture, stirring constantly. Return the mixture to the saucepan and cook over low heat for 3 minutes, stirring continuously, until thickened.
    • Remove from heat and stir in the butter until fully incorporated. Let the cream cool, then place it in the fridge for 30 minutes to set.
  3. Assemble the Pastry:
    • Once the cream is set, whip the cream until stiff peaks form and fold it into the cooled cream mixture.
    • Spread the cream evenly over the cooled pastry.
    • Dollop blueberry jam over the cream layer and use a knife to swirl it into the cream gently.
  4. Chill and Serve:
    • Refrigerate the assembled pastry for an hour to allow the flavors to meld and the cream to firm up.
    • Cut into squares and serve chilled.
