Cozy Weekend Veggie Casserole

Whip up a warm and comforting veggie casserole this weekend that’s perfect for gathering your loved ones around the dinner table. This dish combines tender broccoli, cauliflower, and potatoes with a savory blend of other vegetables, all baked to perfection. It’s easy to make and sure to please everyone with its home-cooked goodness.


  • 4 medium potatoes
  • 1 head of broccoli
  • 1 head of cauliflower
  • 1 teaspoon salt (for boiling)
  • 1 large onion
  • 1 large carrot
  • Olive oil for frying
  • 2 cloves of garlic
  • 1 red bell pepper
  • 2 small green bell peppers
  • A handful of cherry tomatoes
  • 4 eggs
  • 5 tablespoons sunflower oil
  • 1 cup (130g) flour
  • 2 cups (400ml) milk
  • A bunch of parsley and dill, chopped
  • 1 cup (100g) grated cheese
  • 2-3 tablespoons Greek yogurt or sour cream
  • 1 tablespoon ketchup
  • 1 tablespoon mayonnaise
  • 2 additional cloves of garlic, minced
  • More dill for garnish

Let’s Cook:

  1. Prep the Veggies:
    • Start by washing your potatoes, broccoli, and cauliflower. Cut the potatoes into small pieces and separate the broccoli and cauliflower into florets.
    • In a large pot, bring water to a boil with 1 teaspoon of salt. Add the potatoes and cook until they’re soft. Add the broccoli and cauliflower for the last few minutes of cooking to soften them slightly. Drain and set aside.
  2. Sauté:
    • Chop the onion and carrot. In a pan, heat some olive oil over medium heat and sauté the onion and carrot until they start to soften. Add minced garlic and cook for another 2-3 minutes. Set aside.
  3. Prepare the Batter:
    • In a large bowl, beat the eggs with sunflower oil. Gradually add flour, mixing thoroughly to avoid lumps. Stir in the milk until you have a smooth batter. Season with salt to taste and mix in the chopped parsley and dill.
  4. Combine:
    • Preheat your oven to 180°C (350°F).
    • In a large baking dish, combine the boiled potatoes, broccoli, cauliflower, sautéed onion, carrot, and garlic. Chop the red and green peppers and halve the cherry tomatoes, then add them to the dish.
    • Pour the batter over the vegetables, making sure it’s evenly distributed. Sprinkle grated cheese on top.
  5. Bake:
    • Bake in the preheated oven for about 40 minutes, or until the top is golden and the veggies are tender.
  6. Create the Sauce:
    • While the casserole bakes, mix Greek yogurt (or sour cream) with ketchup, mayonnaise, minced garlic, and dill for a tasty sauce.
  7. Serve:
    • Once the casserole is done, let it cool slightly before serving. Dollop the creamy sauce on top or serve it on the side for an extra flavor boost.
