This dish combines tender broccoli, cauliflower, and potatoes with a savory blend of other vegetables, all baked to perfection. Ingredients:

  • 4 medium potatoes
  • 1 head of broccoli
  • 1 head of cauliflower
  • 1 teaspoon salt (for boiling)
  • 1 large onion
  • 1 large carrot
  • Olive oil for frying
  • 2 cloves of garlic
  • 1 red bell pepper
  • 2 small green bell peppers
  • A handful of cherry tomatoes
  • 4 eggs
  • 5 tablespoons sunflower oil
  • 1 cup (130g) flour
  • 2 cups (400ml) milk
  • A bunch of parsley and dill, chopped
  • 1 cup (100g) grated cheese
  • 2-3 tablespoons Greek yogurt or sour cream
  • 1 tablespoon ketchup
  • 1 tablespoon mayonnaise
  • 2 additional cloves of garlic, minced
  • More dill for garnish

Let’s Cook:

  1. Prep the Veggies:
    • Start by washing your potatoes, broccoli, and cauliflower. Cut the potatoes into small pieces and separate the broccoli and cauliflower into florets.
    • In a large pot, bring water to a boil with 1 teaspoon of salt. Add the potatoes and cook until they’re soft. Add the broccoli and cauliflower for the last few minutes of cooking to soften them slightly. Drain and set aside.
  2. Sauté:
    • Chop the onion and carrot. In a pan, heat some olive oil over medium heat and sauté the onion and carrot until they start to soften. Add minced garlic and cook for another 2-3 minutes. Set aside.

    • Bake in the preheated oven for about 40 minutes, or until the top is golden and the veggies are tender.

    • While the casserole bakes, mix Greek yogurt (or sour cream) with ketchup, mayonnaise, minced garlic, and dill for a tasty sauce.
