  • 170 milliliters of water

  • 50 grams of pumpkin seeds
  • 20 grams of chia seeds
  • 30 grams of walnuts, roughly chopped
  • 30 grams of hazelnuts, roughly chopped
  • 60 milliliters of extra virgin olive oil, divided
  • 20 grams of psyllium husk powder
  • 1 teaspoon of salt

Instructions:

  1. Prep the Oats: Begin by soaking the oat flakes in 170 milliliters of water. Let them sit for about 10 minutes until the oats have absorbed most of the water and softened.
  2. Blend the Beans: In a food processor, blend the white beans with half of the olive oil (30 milliliters) until you achieve a smooth paste. This bean paste will act as a binding agent for the bread.
  3. Mix Dry Ingredients: In a large mixing bowl, combine the sunflower seeds, chopped peanuts, flax seeds, pumpkin seeds, chia seeds, chopped walnuts, chopped hazelnuts, psyllium husk powder, and salt. Stir well to distribute the ingredients evenly.
  4. Combine: Add the soaked oat flakes and bean paste to the bowl of dry ingredients. Pour in the remaining 30 milliliters of olive oil. Mix thoroughly until all components are well incorporated. The dough should be sticky and dense.
