This shrimp salad is light, fresh, and bursting with flavor. It’s perfect for a quick lunch or a delightful appetizer. The poached shrimp are tender and juicy, mixed with crunchy vegetables and a creamy dressing. 

Ingredients: 

For the Shrimp Salad: 

  • 1 pound poached shrimp (recipe below) 
  • 1/2 cup finely diced red bell pepper (half of a large pepper) 
  • 1/2 cup finely diced celery (1 large stalk) 
  • 1/2 cup of thinly sliced green onions (about 3 to 4 stalks) 
  • 1/2 cup (100 grams) of mayonnaise (consider using homemade mayo) 
  • 2 tablespoons fresh lemon juice 
  • 1/4 cup roughly chopped fresh dill 
  • 1/4 teaspoon fine sea salt 
  • 4 twists of pepper grinder 

For the Poached Shrimp: 

  • 1 pound large shrimp (31-40 per pound), peeled and deveined 
  • 2 quarts water 
  • 1 lemon, cut in half 
  • 2 cloves garlic, peeled and gently smashed 
  • 1 bay leaf 
  • 3 twists of pepper grinder 
  • 1 1/2 tablespoons salt 
  • 1/2 teaspoon Cajun seasoning (optional) 

Instructions: 

  1. Poach the Shrimp: 
  • Fill a large pot with 2 quarts of water and bring it to a boil. Add the squeezed lemon halves along with their juice to the boiling water. 
  • Add the garlic, bay leaf, pepper, salt, and Cajun seasoning (if using) to the water. 
  • Lower the heat to a simmer and gently place the shrimp in the water. Cook for 2-3 minutes, or until the shrimp turn pink and opaque. 
  • Using a slotted spoon, take the shrimp out and immediately place them in an ice bath to halt the cooking process. Once chilled, drain and pat dry. 
  1. Prepare the Salad: 
  • Roughly chop the poached shrimp into bite-sized pieces. 
  • In a large bowl, combine the shrimp, red bell pepper, celery, green onion, mayonnaise, lemon juice, dill, sea salt, and black pepper. 
  • Mix until all ingredients are well combined. 
  1. Serve: 
  • Serve the shrimp salad chilled. It can be enjoyed on its own, on a bed of lettuce, or as a filling for sandwiches or wraps.
