Carrot & Mushroom Stew

  • 3 large carrots, chopped into medium pieces

  • 18 medium-sized mushrooms, quartered (remove stems)

  • 1/4 tsp ground black pepper 
  • 1 mushroom stock cube, chopped (recommended: Kallo) 
  • 1 tsp brown miso 
  • 1 tsp dark brown sugar 
  • 2 tsp soy sauce 
  • 1/2 cup raw cashew nuts (or 1 cup vegan cream) 
  • 2 cups of water (or just 1 cup if you’re using vegan cream) 
  • Finely chopped fresh parsley, for garnishing 

Instructions 

  1. Prepare the Ingredients: 
  • Chop the carrots into medium-sized pieces. 
  • Crush the garlic cloves. 
  • Quarter the mushrooms and remove their stems if necessary. 
  • If using raw cashew nuts, soak them in water for at least 30 minutes, then drain. 
  1. Cook the Vegetables: 
  • Heat a tiny bit of olive oil in a large pot over medium heat. 
  • Add the crushed garlic and sauté for about 1 minute until fragrant. 
  • Add the chopped carrots and quartered mushrooms to the pot. Sauté for 5-7 minutes, stirring now and then, until the vegetables start to soften. 
  1. Add the Seasonings: 
  • Season with salt and ground black pepper. 
  • Add the chopped mushroom stock cube, brown miso, dark brown sugar, and soy sauce. Stir well to combine. 
  1. Add Liquid and Simmer: 
  • Pour in 2 cups of water (or 1 cup if using vegan cream). Stir to combine. 
  • Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 20-25 minutes, or until the carrots are tender. 
  1. Prepare the Cream (if using cashew nuts): 
  • If using raw cashew nuts, blend the soaked and drained cashews with a small amount of water until smooth and creamy. Add the cashew cream to the stew and stir well. If using vegan cream, simply add it to the pot and mix. 
  1. Finish and Serve: 
  • Taste the stew and adjust seasoning if needed. 
  • Ladle the stew into bowls and garnish with finely chopped fresh parsley.
