Squash Croquettes

  • 4 cups shredded yellow squash

  • Place the shredded yellow squash in a colander and sprinkle with a little salt. Allow it to rest for approximately 10 minutes to help release any additional moisture. 
  • Then, using a clean kitchen towel or paper towels, squeeze out as much moisture as possible. 
  1. Mix the Ingredients: 
  • In a large mixing bowl, combine the drained squash, finely diced onion, beaten eggs, self-rising flour, grated Parmesan cheese, chopped chives or parsley, seasoned salt, garlic powder, ground cumin, ground black pepper, and a dash of cayenne.

  • Take a small handful of the mixture and shape it into a patty or ball. Roll the patty in the panko breadcrumbs, pressing gently to adhere. Repeat with the remaining mixture.
