  • 1/4 cup teriyaki sauce
  • 1 cup frozen peas
  • Salt and pepper, to taste

Instructions:

  1. Sauté the Mushrooms:
  • In a large skillet or sauté pan, heat 2 tablespoons of olive oil over medium-high heat.
  • Add sliced mushrooms and cook for 5-7 minutes, stirring occasionally, until mushrooms are tender and lightly browned.
  1. Sauté Aromatics and Rice:
  • In the same skillet, heat the remaining 1 tablespoon of olive oil over medium heat.
  • Add thinly sliced green onions, minced garlic, and ground ginger. Sauté for 1-2 minutes until fragrant.

  1. Cook the Rice:
  • Pour chicken or vegetable broth and teriyaki sauce into the skillet with the rice mixture. Stir well to combine.
  • Bring the mixture to a boil, then lower the heat to a gentle simmer. Cover the skillet with a lid and simmer for 15-20 minutes, or until the rice is tender and liquid is absorbed.
  1. Add Mushrooms and Peas:
  • After the rice is fully cooked, use a fork to fluff it up.
  • Stir in the cooked mushrooms and frozen peas. Cover and let the mixture sit for 5 minutes to heat through.
  1. Season and Serve:
  • Season the Teriyaki Rice Pilaf with Mushrooms and Peas with salt and pepper to taste.
