Ingredients
  

  • 1 pound candied cherries
  • 1 pound candied pineapple
  • 1 pound pitted dates
  • 1 pound chopped pecans
  • 4 8-ounce packages flaked coconut
  • 3 tablespoons all-purpose flour
  • 2 14-ounce cans sweetened condensed milk
  • Double all ingredients for approximately 60 servings.
  • Quadruple all ingredients for approximately 120 servings.

  • Preheat the Oven: Set your oven to 300°F (150°C). Grease and line a large loaf pan or multiple smaller pans with parchment paper for easy removal.
  • Prepare the Dry Ingredients: In a large mixing bowl, combine the candied cherries, candied pineapple, dates, pecans, and flaked coconut. Sprinkle the all-purpose flour over the mixture and toss gently to coat. This helps prevent the fruit from sinking during baking.
  • Mix the Wet Ingredients: Add the sweetened condensed milk to the blend of fruits and nuts, mixing thoroughly. Stir well until everything is evenly combined. The batter will be thick and sticky.
  • Transfer to Baking Pans: Spoon the mixture into the prepared pans, pressing it down lightly to ensure an even texture.
  • Bake: Place the pans in the preheated oven and bake for 1 hour to 1 hour 15 minutes, or until the edges are golden brown and the center is firm. To check for doneness, insert a toothpick into the center; it should come out clean or with only a few crumbs.
  • Cool and Serve: Let the fruit cake cool completely in the pans before removing. Slice and serve as desired.
