- 1 thawed sheet puff pastry 13.2 oz – I use Jus-Rol brand
- 1/2 cup fig preserves
- 4 oz log goat cheese crumbled
- 4-5 sprigs fresh thyme leaves removed
- 2 tbsp light brown sugar
- 1 large egg for egg wash
Prepare the Puff Pastry:
On a lightly floured surface, unroll or unfold the thawed puff pastry sheet.
Using a rolling pin, gently roll the puff pastry to smooth out any creases and create an even thickness.
Spread the Filling:
Spread the fig preserves evenly over the puff pastry, leaving about a 1/2-inch border around the edges.
Crumble the goat cheese over the fig preserves.
Sprinkle the fresh thyme leaves evenly across the pastry.
Roll the Pastry:
Starting from one end, carefully roll the puff pastry into a tight log, ensuring the filling stays inside.
Once rolled, lightly press the seam to seal it.
Slice the Pinwheels:
Using a sharp knife, slice the rolled pastry into 1/2-inch thick pinwheels.
Place the pinwheels on the prepared baking sheet, spacing them about 1-2 inches apart.
Egg Wash and Brown Sugar:
In a small bowl, beat the egg and brush it over the tops of each pinwheel for a golden finish.
Sprinkle a light layer of brown sugar on top of each pinwheel for added sweetness and caramelization.
Bake the Pinwheels:
Bake in the preheated oven for 15-18 minutes, or until the pinwheels are golden brown and puffed.
Remove from the oven and allow them to cool slightly on a wire rack before serving.
