  • 1/2 cup Fresh Squeezed Grapefruit Juice
  • 1/4 cup Extra Virgin Olive Oil Use high quality.
  • 2 tablespoons White Balsamic Vinegar Can substitute with red wine vinegar.
  • 1 tablespoon Minced Shallot Finely minced.
  • 1 teaspoon Grainy Brown Mustard Dijon can be used as substitute.

Step-by-Step Instructions for Avocado, Grapefruit and Fennel Salad

  • Trim the woody stalks from the fennel bulb and thinly slice it crosswise. Place slices in a large mixing bowl.
  • Cube the avocados and segment the grapefruits by slicing off the peel and pith, then carefully cutting between the membrane.
  • Add the avocado cubes and grapefruit segments to the bowl with the fennel. Toss in lightweight greens.
  • In a small bowl, combine grapefruit juice, olive oil, vinegar, shallot, and mustard. Season with salt and pepper, whisk until smooth.
  • Drizzle the dressing over the salad and gently toss to combine. Adjust seasoning if necessary.
  • Transfer to a serving platter, sprinkle with Parmesan and garnish with fennel fronds.

Notes

Store leftovers in an airtight container for up to 1 day. Avoid adding dressing until just before serving to maintain crispness.
