The Best Korean Zucchini Fritters

These Korean Zucchini Fritters are a delicious and easy-to-make snack or side dish. They are crispy on the outside and tender on the inside, served with a flavorful dipping sauce that enhances their taste.

Ingredients:

For 1x Recipe:

  • 0.885 lb of zucchini, or two zucchinis each about 7 inches long
  • 2 large eggs
  • 1 teaspoon salt
  • 1/2 teaspoon toasted sesame oil
  • 1/4 cup all-purpose flour (or cornstarch/potato starch/tapioca starch for extra crispiness)
  • 2 tablespoons oil (any flavorless oil)

For the Dipping Sauce:

  • 2 tablespoons regular soy sauce
  • 2 tablespoons rice vinegar (or white vinegar)
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon toasted sesame seeds
  • 1/2 teaspoon red chili flakes (optional)

Instructions:

  1. Prepare the Zucchini:
  • Wash the zucchinis and cut them into thin rounds or half-moons.
  • Place the zucchini slices in a colander and sprinkle with 1 teaspoon of salt. Allow them to rest for around 10 minutes to release any excess moisture.
  • After 10 minutes, pat the zucchini slices dry with paper towels.
  1. Prepare the Batter:
  • In a large bowl, beat the eggs. Add the toasted sesame oil and mix well.
  • Add the zucchini slices to the bowl with the beaten eggs and toss to coat.
  • Sprinkle the all-purpose flour (or chosen starch) over the zucchini and toss again until all slices are evenly coated.
  1. Cook the Fritters:
  • Warm 2 tablespoons of oil in a large skillet set to medium-high heat.
  • Once the oil is hot, add the coated zucchini slices in a single layer. Avoid overcrowding the pan by cooking in batches if needed.
  • Fry the zucchini slices for 2-3 minutes on each side, or until golden brown and crispy. Place the cooked fritters on a plate lined with paper towels to absorb any excess oil.
  1. Prepare the Dipping Sauce:
  • In a small bowl, combine the soy sauce, rice vinegar, toasted sesame oil, toasted sesame seeds, and red chili flakes (if using). Mix well.
  1. Serve:
  • Serve the warm zucchini fritters with the dipping sauce on the side.

Conclusion:

These Korean Zucchini Fritters offer a delightful mix of crispiness and tenderness, with their rich flavors perfectly complemented by the dipping sauce. Ideal as an appetizer, snack, or side dish, you’ll love the delicious taste and texture of this simple Korean-inspired recipe.
