This spinach stuffed chicken breast recipe is a simple yet delicious dish, perfect for a quick dinner. With just six main ingredients, you can create a flavorful and healthy meal that’s sure to impress. 

Ingredients: 

  • 4 (8-oz) boneless skinless chicken breasts 
  • 2 tsp sea salt 
  • 1/2 tsp black pepper 
  • 6 oz fresh spinach (chopped) 
  • 2 oz cream cheese (softened) 
  • 2 cloves garlic (minced) 
  • 1 tbsp olive oil 
  • 1 cup mozzarella cheese (shredded, divided) 
  • One medium Roma tomato, thinly sliced into 8 pieces 

Instructions: 

  1. Preheat the Oven: 
  • Preheat your oven to 375°F (190°C). Grease a baking dish with a bit of olive oil or cooking spray and set aside. 
  1. Prepare the Chicken Breasts: 
  • Using a sharp knife, make a pocket in each chicken breast by slicing horizontally through the thickest part, being careful not to cut all the way through. 
  • Season both sides of the chicken breasts with sea salt and black pepper. 
  1. Make the Spinach Filling: 
  • Warm the olive oil in a medium skillet over medium heat. Sauté the minced garlic for about a minute until it becomes aromatic. 
  • Add the chopped spinach and cook until it wilts, approximately 2-3 minutes. Remove from heat. 
  • In a mixing bowl, combine the cooked spinach, softened cream cheese, and half of the shredded mozzarella cheese.  
  1. Stuff the Chicken Breasts: 
  • Stuff each chicken breast pocket with the spinach and cheese mixture, distributing it evenly among the four breasts. 
  • Place two slices of Roma tomato inside each pocket on top of the spinach mixture. 
  1. Bake the Chicken: 
  • Arrange the stuffed chicken breasts in the greased baking dish. Sprinkle the remaining mozzarella cheese on top of each chicken breast. 
  • Place in the preheated oven and bake for 25-30 minutes, or until the chicken is fully cooked and the cheese is melted and bubbling. 
  1. Serve: 
  • Take the chicken out of the oven and let it sit for a few minutes before serving, allowing the juices to settle and ensuring the chicken stays moist and flavorful.
