This Spinach and Avocado Grilled Cheese is a delicious and nutritious twist on the classic grilled cheese sandwich. The creamy avocado and fresh spinach add a wonderful flavor and texture, making this a perfect quick and easy meal. 

Ingredients: 

  • 2 slices bread 
  • 2-3 slices of your preferred melting cheese, like American, Pepper Jack, or Mild White Cheddar 
  • 1/2-1 avocado (feel free to use half or a whole avocado) 
  • 6-10 fresh spinach leaves 
  • Butter, as needed 

Instructions: 

  1. Prepare the Ingredients: 
  • Slice the avocado and cheese, and rinse and pat dry the spinach leaves. 
  1. Assemble the Sandwich: 
  • Lay out the two slices of bread. Spread the avocado slices evenly on one slice of bread
  • Place the spinach leaves on top of the avocado. 
  • Add the slices of cheese over the spinach. 
  • Top with the second slice of bread to close the sandwich. 
  1. Butter the Bread: 
  • Butter the outer sides of the bread slices generously. 
  1. Cook the Sandwich: 
  • Heat a skillet or griddle over medium heat. Place the sandwich into the hot skillet.  
  • Cook for 3-4 minutes per side, or until the bread is golden brown and the cheese has melted. 
  1. Serve: 
  • Take the sandwich off the skillet and let it rest for a minute before cutting it in half.
