  • ½ cup green peas (fresh or frozen)
  • 1 medium red onion, chopped
  • ¾ cup chopped green bell pepper
  • 1 Tbsp olive oil
  • 4-5 green chilies, finely chopped
  • ½ tsp cumin seeds
  • 1 Tbsp grated ginger
  • Salt to taste
  • ½ tsp turmeric powder
  • 1 tsp mango powder or lemon juice
  • 1 egg, lightly beaten (for egg wash) or melted butter

Instructions

  1. Prepare the Crust:
  • In a mixing bowl, combine all-purpose flour, whole wheat flour, toasted cumin seeds, salt, and a pinch of sugar.
  • Add the grated frozen butter and mix until the mixture resembles coarse crumbs.
  • Stir in the low-fat milk and yogurt, mixing until a dough forms. If necessary, add a bit more milk to achieve the right consistency.
  • Seal the dough in plastic wrap and place it in the refrigerator for a minimum of 30 minutes.
  1. Prepare the Filling:
  • Warm olive oil in a large skillet over medium heat. Toss in cumin seeds and allow them to sizzle briefly.
  • Stir in the diced red onion and cook until it becomes transparent.
  • Stir in the grated ginger and green chilies, cooking for another minute.
  • Add the chopped carrots, cauliflower, and green peas. Continue cooking until the vegetables are soft, which should take approximately 5-7 minutes.
  • Stir in the mashed potatoes, turmeric powder, and salt. Blend thoroughly and cook for an additional 2 minutes.
  • Remove from heat and add mango powder or lemon juice. Adjust seasoning if necessary.
  1. Assemble the Pie:

  • Spoon the vegetable filling into the crust, spreading it evenly.
  • Spread the remaining dough over the filling, covering it completely.
  • Seal the edges by pressing them together. You can use leftover dough to create decorative shapes on top if desired.
  • Brush the top with the beaten egg or melted butter.
  1. Bake the Pie:
  • Place the pie in the preheated oven and bake for 30-35 minutes, or until the crust is golden brown and crispy.
