  • 1/2 cup butter
  • 2/3 cup evaporated milk
  • 1/2 tsp vanilla extract
  • 1 cup sugar
  • 1 cup chopped pecans or walnuts
  • 1 cup coconut flakes

Instructions:

  1. Prepare the Cake:
    • Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking dish.
    • In a large mixing bowl, combine 2 cups flour, 2 cups sugar, and 1 tsp. baking soda. Add 2 large eggs, 1 tsp. vanilla extract, and the can of crushed pineapple along with its juice. Mix until well combined.
    • Pour the batter into the prepared baking dish. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  2. Make the Topping:
    • When the cake is almost done baking, start preparing the topping. In a saucepan over medium heat, melt 1/2 cup butter. Stir in 2/3 cup evaporated milk, 1/2 tsp vanilla extract, and 1 cup sugar.     • Remove the saucepan from the heat. Stir in 1 cup chopped pecans or walnuts and 1 cup coconut flakes.
