They’re easy to make, kid-friendly, and fully customizable with your favorite ingredients!

Ingredients

Scale
  • 1 lb ground beef, browned and seasoned with taco seasoning
  • Prepared cornbread batter (enough for a standard muffin tin)
  • 1 cup shredded cheddar cheese
  • Sour cream, for topping
  • 1 large tomato, finely diced
  • Green onions, finely chopped, for garnish
  • Cilantro, finely chopped, for garnish
  • Guacamole (optional), for topping

Instructions

  • Preheat the Oven – Set your oven according to the cornbread mix instructions (typically 375°F/190°C). Prepare a muffin tin with liners or lightly grease it to prevent sticking.
  • Fill with Cornbread BatterSpoon the cornbread batter into each muffin cup, filling them one-third full to create a sturdy base.
  • Add Seasoned Ground Beef – Scoop a generous tablespoon of cooked and seasoned ground beef into each cup, pressing slightly into the batter.
  • Top with Cheese – Sprinkle shredded cheddar cheese over each cupcake, dividing evenly among all.
  • Bake Until Golden and Bubbly – Follow the baking time on the cornbread package (usually 15-20 minutes) or until the cornbread is cooked through and the cheese is melted.
  • Cool Slightly & Remove – Let the cupcakes rest in the pan for 5 minutes before carefully removing them.
  • Add Toppings – Top each cupcake with a dollop of sour cream, diced tomatoes, green onions, and cilantro. Add guacamole if desired.
  • Serve & Enjoy!

Notes

  • Make it spicy: Add jalapeños or a pinch of cayenne pepper to the taco seasoning for extra heat.
  • Gluten-free option: Use a gluten-free cornbread mix.
  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven at 350°F (175°C) for 8-10 minutes or microwave for 30-45 seconds.
  • Meal prep tip: You can prepare the beef filling ahead of time and store it in the fridge for quick assembly.
