Pineapple Pico de Gallo is a vibrant and refreshing twist on traditional pico de gallo. The addition of sweet pineapple perfectly complements the tangy tomatoes, spicy jalapeño, and fresh cilantro, making it a delicious topping or side for your favorite Mexican dishes.

Ingredients

  • 1 lb tomatoes (such as 4-6 plum or Roma tomatoes), diced
  • 1 small red onion, finely diced
  • ¾ – 1¼ cups finely diced pineapple (fresh or canned), to taste
  • ¼ – ½ cup fresh cilantro leaves, diced, to taste
  • ½ – 1 jalapeño pepper, finely diced, to taste
  • 1.5 – 2 tablespoons fresh lime juice
  • ½ – ¾ teaspoon salt, to taste
  • ½ teaspoon ground black pepper, to taste
  • ½ teaspoon garlic powder
  • ½ teaspoon ground cumin

Instructions

Prepare the Ingredients

  • Dice Tomatoes: Dice the tomatoes into small, even pieces.
  • Dice Onion: Finely dice the red onion.
  • Dice Pineapple: If using fresh pineapple, remove the skin and core, then finely dice the pineapple. If using canned pineapple, drain well and finely dice.
  • Chop Cilantro: Roughly chop the fresh cilantro leaves.
  • Dice Jalapeño: Finely dice the jalapeño pepper, removing the seeds and membrane if you prefer less heat.

Combine the Ingredients

  • Mix Vegetables: In a large bowl, combine the diced tomatoes, red onion, pineapple, cilantro, and jalapeño.
  • Add Seasonings: Add the fresh lime juice, salt, black pepper, garlic powder, and ground cumin. Stir well to combine.

Taste and Adjust

  • Adjust Seasonings: Taste the pico de gallo and adjust the salt, lime juice, and other seasonings to your preference.

Chill and Serve

  • Chill: For best flavor, let the Pineapple Pico de Gallo chill in the refrigerator for at least 30 minutes to allow the flavors to meld.
  • Serve: Serve the Pineapple Pico de Gallo as a topping for tacos, grilled meats, or fish, or enjoy it with tortilla chips as a refreshing dip.

Conclusion

Pineapple Pico de Gallo is a delicious and versatile condiment that adds a burst of flavor to any dish. The combination of sweet pineapple, tangy tomatoes, spicy jalapeño, and fresh cilantro creates a vibrant and refreshing topping perfect for your favorite Mexican dishes. Enjoy this delightful pico de gallo with family and friends!
