Ingredients 

  • 6 eggs 
  • 8 oz (220 g) canned tuna, drained 
  • 1 ½ cups red bell pepper, chopped 
  • 3 scallions, chopped 
  • ⅓ cup tomatoes, chopped 
  • 3 tbsp pickled jalapenos, chopped 
  • ¼ cup greens, including dill and parsley, chopped 
  • ¼ cup olives, chopped 
  • 1 ½ cups spinach 
  • ½ cup shredded cheese 
  • 4 ½ tbsp quick oats 

Instructions 

  1. Preheat the Oven
  • Preheat your oven to 375°F (190°C). Prepare a baking dish by either greasing it or lining it with parchment paper. 
  1. Prepare the Vegetables and Tuna
  • Drain the canned tuna and break it apart with a fork. 
  • Chop the red bell pepper, scallions, tomatoes, pickled jalapenos, dill, parsley, and olives. 
  • If the spinach leaves are large, chop them roughly. 
  1. Mix the Ingredients
  • In a spacious bowl, beat the eggs until they are thoroughly mixed. 
  • Add the drained and flaked tuna, chopped vegetables, spinach, shredded cheese, and quick oats to the bowl. 
  • Mix everything together until well combined. Season with salt and pepper to taste.

  • Transfer the mixture into the prepped baking dish, ensuring it is evenly distributed.
