This classic Cheese and Onion Pie, inspired by Mary Berry, is a delicious and comforting dish perfect for dinner. The combination of buttery onions, tender potatoes, and a rich cheese sauce makes it a delightful meal that serves up to 6 people. 

Ingredients 

  • 65 grams (2.3 oz) butter 
  • 2 onions, thinly sliced 
  • 460 grams (1 lb) potatoes, peeled and cubed 
  • 620 ml (2 ½ cups) milk 
  • 60 grams (½ cup) plain flour 
  • 1.25 tablespoons mustard 
  • 1.25 tablespoons dried thyme 
  • 60 grams (2 oz) shredded cheddar cheese 
  • 60 grams (2 oz) shredded parmesan cheese 
  • Pinch of salt 
  • Pinch of ground black pepper 

Instructions 

  1. Set the Oven:
  • Heat your oven to 190°C (375°F). 
  1. Cook the Potatoes:
  • Place the cubed potatoes in a pot of boiling water and cook until tender, about 10-12 minutes. Drain and set aside. 
  1. Sauté the Onions:  
  • In a large skillet, melt 25 grams (about 1 oz) of the butter over medium heat. Add the thinly sliced onions and cook until soft and golden, about 10 minutes. Set aside.
  1. Make the Cheese Sauce
  • In a medium saucepan, melt the remaining 40 grams (about 1.3 oz) of butter over medium heat. 
  • Add the flour and continuously stir for 1-2 minutes to create a roux. 
  • Gradually whisk in the milk, continuing to stir until the mixture thickens and comes to a boil. 
  • Reduce the heat and simmer for a few minutes until smooth. 
  1. Add Flavor to the Sauce:
  • Remove the sauce from heat and stir in the mustard, dried thyme, salt, and black pepper.
  • Add the shredded cheddar and parmesan cheese, stirring until melted and well combined. 
  1. Combine Ingredients:
  • In a large bowl, mix together the cooked potatoes, sautéed onions, and cheese sauce until evenly distributed. 
  1. Prepare the Pie:
  • Transfer the mixture to a greased pie dish, spreading it out evenly.
  1. Bake:
  • Place the pie dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and bubbly. 
  1. Let it Cool:
  • Allow the pie to rest for a few minutes before serving.
  • This allows the filling to set slightly and makes it easier to slice.
