Ingredients

For the Bread:

  • 2 large eggs
  • ½ cup vegetable oil
  • 2 tsp lemon zest (zest from 1 large lemon)
  • Juice one large lemon to obtain 3 tablespoons of lemon juice.
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 cups all-purpose flour
  • 2 cups lightly packed shredded zucchini
  • 3 tbsp poppy seeds

For the Glaze:

  • 1 ½ cups powdered sugar
  • 2 tbsp lemon juice (or a mixture of lemon juice and milk/cream to thin)

Instructions

  1. Preheat the Oven
  • Preheat your oven to 350°F (175°C).
  • Get a 9×5-inch loaf pan ready by either greasing and flouring it or lining it with parchment paper.
  1. Prepare the Zucchini
  • Shred the zucchini and place it in a clean kitchen towel or paper towels. Remove excess moisture and set aside.
  1. Mix Wet Ingredients
  • In a spacious bowl, thoroughly whisk the eggs.
  • Add the vegetable oil, lemon zest, lemon juice, and granulated sugar. Mix until smooth.
  1. Combine Dry Ingredients
  • Combine the baking powder, baking soda, salt, and flour in a separate bowl.
  1. Combine Wet and Dry Ingredients
  • Slowly incorporate the dry ingredients into the egg mixture, mixing just until combined.
  • Fold in the shredded zucchini and poppy seeds until evenly distributed.
  1. Bake the Bread
  • Evenly distribute the batter in the prepared loaf pan.
  • Place in the preheated oven and bake for 50-60 minutes, or until a skewer inserted in the middle comes out clean.
  1. Cool the Bread
  • Let the bread sit in the pan for about 10 minutes to cool slightly, then move it to a wire rack to finish cooling completely.
  1. Prepare the Glaze
  • In a small bowl, whisk together the powdered sugar and lemon juice (or the mixture of lemon juice and milk/cream) until smooth and pourable.
  1. Glaze the Bread
  • After the bread has fully cooled, pour the glaze over it. Allow the glaze to harden before cutting and serving.

Conclusion

Lemon Poppy Seed Zucchini Bread is a perfect blend of flavors and textures, making it a wonderful treat for any time of the day. The tangy lemon and crunchy poppy seeds complement the moistness of the zucchini, while the sweet lemon glaze adds a delicious finishing touch. Enjoy this delightful bread with your morning coffee or as an afternoon snack!
