Hot & Sour Soup (30 Minute Recipe)

Ingredients 

  • 6 oz Baby Bella Mushrooms, sliced 
  • 8 oz Extra Firm Tofu, cubed 
  • 1 tsp Grated Ginger 
  • 3 Cloves Garlic, grated 
  • 1 Fresno Pepper (Red Jalapeño), sliced 
  • 4 Cups Vegetable Broth 
  • 2 Stalks Green Onion, chopped 
  • 3 Tbsp Soy Sauce 
  • 2 Tbsp Rice Vinegar 
  • 1 Tbsp Chili Garlic Paste 
  • 1 Tbsp Sesame Oil 
  • 3 Tbsp Cornstarch 
  • 3 Tbsp Water 
  • 2 Eggs, beaten 
  • 2 Tbsp Avocado Oil 

Instructions 

  1. Prepare the Ingredients
  • Slice the Baby Bella mushrooms. 
  • Cube the extra firm tofu. 
  • Grate the ginger and garlic. 
  • Slice the Fresno pepper. 
  • Chop the green onions. 
  1. Heat the Oil
  • In a large pot, warm 2 tablespoons of avocado oil over medium-high heat. 
  1. Sauté the Aromatics
  • Add the grated ginger, garlic, and sliced Fresno pepper to the pot. Cook for 1-2 minutes until the aroma is released. 
  1. Add the Broth and Mushrooms
  • Add the vegetable broth and bring it to a gentle simmer.
