Homemade Chop Suey Recipe

Ingredients 

For the Chicken 

  • 3-4 boneless, skinless chicken breasts (thinly sliced) 
  • 1/2 teaspoon baking soda 
  • 2 tablespoons vegetable oil 
  • 2 tablespoons garlic, minced 
  • 1 small white onion, sliced 
  • 3 medium carrots, thinly sliced 
  • 3 stems bok choy, chopped 
  • 1 cup mushrooms, sliced 
  • 1 cup bean sprouts 

For the Chop Suey Sauce 

  • 1 tablespoon cornstarch 
  • 2 tablespoons soy sauce 
  • 2 1/2 tablespoons oyster sauce 
  • 1 tablespoon shaoxing wine 
  • 1 teaspoon sesame oil 
  • 1 teaspoon white pepper 
  • 1 cup water 

Instructions 

  1. Prepare the Chicken: In a bowl, toss the thinly sliced chicken breasts with 1/2 teaspoon of baking soda. Let it sit for 15 minutes to tenderize the meat. Wash the chicken well with cold water, then dry it completely using paper towels. 
  1. Make the Sauce: In a small bowl, combine the cornstarch, soy sauce, oyster sauce, shaoxing wine, sesame oil, white pepper, and water. Mix until the cornstarch is completely blended in and the mixture is smooth. 
  1. Prepare the Chicken: Warm 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken slices and stir-fry until they are cooked through and lightly browned, about 5-7 minutes. 
  1. Sauté the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and sliced white onion, stir-frying until fragrant, about 1-2 minutes. Add the carrots and cook for another 2-3 minutes until they start to soften. 
  1. Add More Vegetables: Add the bok choy and mushrooms to the skillet. Stir-fry for another 3-4 minutes until the vegetables are tender but still crisp. 
  1. Add Chicken to Sauce: Place the cooked chicken back into the skillet. Pour the Chop Suey sauce over the chicken and vegetables. Mix thoroughly to ensure everything is coated with the sauce. Continue cooking for 2-3 minutes, or until the sauce has thickened and the dish is heated throughout. 
  1. Finish with Bean Sprouts: Add the bean sprouts to the skillet and stir for another minute to combine and heat them through.
