These Garlic Parmesan Chicken Meatloaves are a flavorful and comforting dish, perfect for a family dinner. The combination of ground chicken, fresh Parmesan cheese, and a creamy garlic sauce makes this meal a standout. 

Ingredients: 

Meatloaves: 

  • 2 lbs ground chicken 
  • 1/2 yellow onion, diced (about 1/2 cup diced) 
  • 8-10 garlic cloves, pressed 
  • 3/4 cup bread crumbs (or 2 slices of dense bread, crumbled) 
  • 1 egg 
  • 3 Tbsp fresh minced parsley 
  • 3 oz fresh grated Parmesan cheese 
  • Salt, to taste 
  • Fresh cracked black pepper, to taste 
  • Optional: extra fresh grated Parmesan cheese to top 

Cream Sauce: 

  • 2 Tbsp olive oil 
  • 3 garlic cloves, minced 
  • 1 Tbsp all-purpose flour 
  • 1 1/2 cups heavy whipping cream 
  • 3 oz fresh grated Parmesan cheese 
  • 1 Tbsp minced fresh parsley 
  • Salt, to taste 

Instructions: 

  1. Preheat the Oven: 
  • Preheat your oven to 375°F (190°C). Prepare a baking sheet by either lining it with parchment paper or lightly coating it with oil. 
  1. Prepare the Meatloaf Mixture: 
  • In a large mixing bowl, combine the ground chicken, diced onion, pressed garlic, bread crumbs (or crumbled bread), egg, minced parsley, and grated Parmesan cheese. Mix until well combined. 
  • Season the mixture with salt and fresh cracked black pepper to taste. 
  1. Form the Meatloaves: 
  • Divide the mixture into individual portions and shape them into mini meatloaves or one large meatloaf, as desired. Place the meatloaves on the prepared baking sheet. 
  • If desired, sprinkle extra fresh grated Parmesan cheese on top of each meatloaf. 
  1. Bake the Meatloaves: 
  • Bake in the preheated oven for 25-30 minutes, or until the meatloaves are cooked through and reach an internal temperature of 165°F (74°C). 
  1. Prepare the Cream Sauce: 
  • While the meatloaves are baking, heat the olive oil in a saucepan over medium heat. Add the minced garlic and sauté for about 1 minute until it becomes fragrant. 
  • Sprinkle in the flour and stir for another minute to create a roux. 
  • Gradually whisk in the heavy whipping cream, ensuring there are no lumps. Bring the mixture to a simmer. 
  • Stir in the grated Parmesan cheese until it melts and the sauce becomes thick and creamy. 
  • Season with salt to taste and stir in the minced fresh parsley. 
  1. Serve: 
  • Once the meatloaves are done baking, remove them from the oven and let them rest for a few minutes. 
  • Serve the meatloaves topped with the creamy garlic Parmesan sauce.
