Delicious Mongolian Beef

Ingredients 

Mongolian Beef: 

  • 2 lbs of beef stew tips, flank steak, or New York strip steak (with excess fat removed), sliced thinly against the grain

  • 1/2 cup of a mild oil, like canola or vegetable oil 
  • 4 stalks green onion, green part only, cut into 2-inch pieces 
  • 3 bell peppers, cut into strips 
  • 1 large onion, cut into 1/4-inch rings 

Mongolian Beef Sauce: 

  • 2 tsp ginger powder (or 4 tsp fresh grated ginger) 
  • 4-5 garlic cloves, minced 
  • 1/2 cup low sodium soy sauce 
  • 1/2 cup water 
  • 1/2 cup brown sugar 
  • 1 tsp Sriracha sauce (adjust to desired spiciness) 

Instructions 

  1. Prepare the Beef: 
  • In a large bowl, toss the beef strips with the cornstarch until each piece is well coated. Shake off any excess cornstarch. 
  • Warm the neutral oil in a large skillet or wok over medium-high heat. 
  1. Cook the Beef: 
  • In batches, add the beef strips to the hot oil, ensuring not to overcrowd the pan. Cook for 2-3 minutes on each side until the beef is browned and crispy.
  • Remove the cooked beef from the skillet and drain on paper towels. Repeat with the remaining beef. 
  1. Prepare the Vegetables: 
  • In the same skillet, drain off any extra oil, keeping just about 1 tablespoon in the pan. Add the bell pepper strips and onion rings, and stir-fry for approximately 3-4 minutes, or until they begin to soften.
