Crispy Salmon Fritters 

These crispy salmon fritters are a delicious and easy way to enjoy salmon, whether using fresh or canned. Perfect as an appetizer, snack, or main course, they are flavored with a mix of herbs and spices that complement the natural taste of the fish. 

Ingredients: 

  • 2 cups flaked salmon (either baked fillet or well-drained canned salmon) 
  • 4 eggs, separated 
  • 3 tablespoons all-purpose flour

  • 1/2 teaspoon ground black pepper 
  • 1/2 teaspoon onion powder 
  • 1/2 teaspoon garlic powder

  • Canola oil, or oil of choice for frying (enough to give about 1 1/2 inches in the pan) 

Instructions: 

  1. Prepare the Salmon: 
  • If using a fresh salmon fillet, bake it at 400°F (200°C) for about 7 minutes, let it cool, and then flake it into small pieces. 
  • If using canned salmon, ensure it is well-drained and flake it into small pieces. 
  1. Separate the Eggs: 
  • Separate the egg whites from the yolks. In a large mixing bowl, beat the egg yolks and set aside the egg whites. 
  1. Mix the Ingredients: 
  • To the beaten egg yolks, add the flaked salmon, all-purpose flour, salt, black pepper, onion powder, garlic powder, dill weed, and parsley. Mix until well combined. 
  1. Beat the Egg Whites: 
  • In another bowl, whisk the egg whites until they hold stiff peaks. Gently fold the beaten egg whites into the salmon mixture, ensuring not to deflate them too much. 
  1. Heat the Oil: 
  • In a deep frying pan, heat enough oil to give you about 1 1/2 inches depth over medium-high heat. 
  1. Form and Fry the Fritters: 
  • Once the oil is hot (around 350°F or 175°C), drop spoonfuls of the salmon mixture into the oil. Cook the fritters in small groups to prevent the pan from becoming too crowded. 
  • Cook each fritter for about 3-4 minutes per side, or until they are golden brown and crispy. Lift the fritters out of the oil with a slotted spoon and transfer them to a plate lined with paper towels to soak up any extra oil.
