Chinese Pepper Steak

  • 1 red onion, cut into 1-inch squares 
  • 1 green bell pepper, chopped into 1-inch pieces

Instructions 

Prepare the Beef 

  • Slice the Steak: Thinly slice the beef top sirloin steak against the grain into bite-sized strips. 
  • Marinate the Beef: In a bowl, combine the soy sauce, white sugar, cornstarch, and ground ginger. Place the beef strips into the bowl, ensuring they are well-coated with the marinade. Allow the beef to sit and absorb the flavors for a minimum of 15-20 minutes. 

Prepare the Vegetables 

  • Cut the Vegetables: Cut the red onion and green bell pepper into 1-inch squares. Cut the tomatoes into wedges. 

Cook the Beef 

  • Heat Oil: In a large skillet or wok, heat 1 1/2 tablespoons of vegetable oil over medium-high heat. 
  • Cook the Vegetables: Toss the red onion and green bell pepper into the skillet. Sauté for 3-4 minutes until the vegetables soften but still retain a bit of crunch. 

Cook the Vegetables 

  • Heat Remaining Oil: In the same skillet, add the remaining 1 1/2 tablespoons of vegetable oil. 
  • Stir-Fry Vegetables: Add the red onion and green bell pepper to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender-crisp. 
  • Add Tomatoes: Add the tomato wedges to the skillet and stir-fry for another 1-2 minutes until they are slightly softened.

  • Mix in Beef: Add the previously cooked beef back into the skillet with the vegetables. Stir everything together to blend the flavors and heat the beef through.
