Chicken Sotanghon Soup 

Chicken Sotanghon Soup is a comforting and flavorful Filipino soup made with tender chicken, vermicelli (sotanghon) noodles, and a variety of vegetables. This hearty soup is perfect for warming up on a chilly day or as a nourishing meal any time of the year. 

Ingredients 

  • 1 ½ lbs chicken breast 
  • 1 piece Knorr Chicken Cube 
  • 2 ½ ounces sotanghon noodles 
  • 7 cups water 
  • 1 piece dried bay leaf 
  • 1 ½ cups cabbage, shredded 
  • 1 carrot, julienned 
  • ½ cup scallions, chopped 
  • 2 stalks celery, chopped 
  • 1 onion, chopped 
  • 5 cloves garlic, minced 
  • 2 tablespoons roasted garlic 
  • Fish sauce and ground black pepper, to taste 
  • ¾ cup annatto water (see preparation below) 
  • 3 tablespoons cooking oil 

Annatto Water: 

  • 1 tablespoon annatto seeds 
  • ¾ cup warm water 

Instructions 

  1. Prepare the Annatto Water
  • Soak 1 tablespoon of annatto seeds in ¾ cup of warm water for about 10 minutes. Stir occasionally. 
  • Strain and discard the seeds, keeping the orange-colored water. Set aside. 
  1. Cook the Chicken
  • Fill a large pot with 7 cups of water and bring it to a rolling boil. 
  • Add the chicken breast and cook until fully cooked, about 15-20 minutes. 
  • Take the chicken out of the pot and allow it to cool down.  
  • Shred the chicken into bite-sized pieces. Set aside the chicken and the broth. 
  1. Prepare the Noodles
  • Soak the sotanghon noodles in warm water until they become soft. Drain and set aside. 
  1. Sauté the Aromatics
  • Warm 3 tablespoons of cooking oil in a large pot over medium heat. 
  • Add the minced garlic, chopped onion, and chopped celery. Sauté until the onion becomes translucent. 
  1. Combine Ingredients
  • Add the shredded chicken back into the pot along with the chicken broth. 
  • Stir in the Knorr Chicken Cube, dried bay leaf, julienned carrot, and shredded cabbage. 
  • Pour in the annatto water and bring the soup to a boil. 
  1. Simmer
  • Add the softened sotanghon noodles to the pot. 
  • Flavor with fish sauce and freshly ground black pepper according to your preference. 
  • Reduce the heat and let the soup simmer for about 5-10 minutes, allowing the flavors to meld together. 
  1. Finish the Soup
  • Stir in the chopped scallions and 2 tablespoons of roasted garlic. 
  • Let the soup cook for another 2 minutes. 
  1. Serve
  • Ladle the Chicken Sotanghon Soup into bowls. 
  • Garnish with additional chopped scallions and roasted garlic if desired. 
  • Serve hot and enjoy!
