This Cheesy Zucchini Rice is a delicious and easy side dish that’s perfect for any meal. The combination of tender rice, fresh zucchini, and sharp cheddar cheese makes it a flavorful and nutritious option.

Ingredients:

  • 1 cup white rice
  • 2 cups chicken broth
  • Grate one medium zucchini or two small ones to yield approximately 2 cups.
  • 1 cup shredded sharp cheddar cheese
  • 1/2 teaspoon garlic powder
  • 1 teaspoon salt
  • Pepper, to taste
  • 1-2 tablespoons milk

Instructions:

  1. Cook the Rice:
  • Heat the chicken broth in a medium saucepan until it reaches a boil. Stir in the rice, then lower the heat to a simmer and cover the pan.
  • Simmer for about 15-20 minutes, or until the rice is tender and the broth is fully absorbed.
  1. Prepare the Zucchini:
  • While the rice is cooking, grate the zucchini using a box grater or food processor. Use a clean kitchen towel or paper towels to press out any excess moisture.
  1. Combine Ingredients:
  • When the rice is fully cooked, take the saucepan off the burner.
  • Add the grated zucchini, shredded cheddar cheese, garlic powder, salt, and pepper to the rice. Mix thoroughly until the cheese has melted and everything is evenly incorporated.
  • If the mixture seems too thick, add 1-2 tablespoons of milk to achieve the desired consistency.
  1. Serve:
  • Serve the Cheesy Zucchini Rice hot as a side dish to your favorite main course. Enjoy!
