Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Cook Vegetables:
    • In a large skillet, melt 1 tablespoon of butter over medium heat. Add the diced red bell pepper and shallots, and sauté until soft, about 5 minutes.

  4. Prepare the Topping:
    • In a small bowl, mix the panko bread crumbs with melted butter, garlic powder, and chopped parsley.
  5. Assemble the Dip:
    • Transfer the dip mixture to a suitable baking dish. Sprinkle the panko topping evenly over the surface.
  6. Bake:
    • Bake in the preheated oven for about 20-25 minutes, or until the topping is golden brown and the dip is bubbly.
  7. Serve:
    • Serve warm with sliced baguette, crackers, or a selection of fresh vegetables for dipping.

Tips:

  • Variations: Feel free to add capers or chopped pickles to the dip mixture for an extra burst of flavor.
  • Make Ahead: You can prepare this dip a day in advance, store it in the refrigerator, and bake it just before serving to save time.
  • Dietary Adjustments: For a lighter version, you can use low-fat cream cheese and sour cream.
