Ingredients

  • 1/4 cup mayonnaise
  • 1 tablespoon yellow mustard
  • Cayenne pepper, to taste
  • Paprika, to taste

  • Shredded lettuce

Instructions

  1. Prepare the Sauce:
    • In a small bowl, mix together the ketchup, mayonnaise, yellow mustard, cayenne pepper, and paprika. Adjust the seasoning to taste. Set aside.

    • In a large skillet, melt 1 tablespoon of butter over medium heat.

    • Cook for about 2-3 minutes, or until the bottom tortilla is golden brown and the cheese begins to melt. Carefully flip the quesadilla and cook for another 2-3 minutes until the second side is golden brown and the cheese is fully melted.
    • Repeat with the remaining tortillas, cheese, and beef to make 4 quesadillas.
  4. Serve:
    • Cut each quesadilla into wedges and serve hot.
    • Top with chopped tomatoes, shredded lettuce, and sliced pickles.
    • Drizzle with the prepared sauce or serve the sauce on the side for dipping.
