Ingredients 

  • 1 14 oz package refrigerated pie crust, brought to room temperature per instructions 
  • 2 Tbsp light butter or butter 
  • 3 green onions, chopped 
  • 1 cup whole milk plus 3 Tbsp 
  • 4 oz onion & chive cream cheese, softened 
  • 1 1/2 tsp garlic salt 
  • 1/2 tsp black pepper 
  • 1/8 tsp ground mustard 
  • 2 Tbsp all-purpose flour 
  • 2 cups shredded sharp cheddar cheese, divided 
  • 3 cups rotisserie chicken, roughly chopped 
  • 1 1/2 cups broccoli florets, steamed until crisp-tender and chopped 
  • 1 large egg, beaten with 1 Tbsp water 

Instructions 

  1. Heat the Oven: 
  • Set your oven to 375°F (190°C) to preheat.
  1. Prepare the Filling:
  • In a large saucepan, melt the butter over medium heat.
  • Add the chopped green onions and sauté until they are tender, about 2 minutes. 
  1. Create the Sauce:
  • Whisk in the flour, garlic salt, black pepper, and ground mustard. Cook for 1 minute, stirring constantly.
  • Gradually whisk in 1 cup of whole milk and cook until the mixture starts to thicken. 
  1. Add Cream Cheese: Stir in the softened onion & chive cream cheese until well combined and smooth. 
  1. Incorporate Cheese:
  • Remove the saucepan from heat and stir in 1 1/2 cups of shredded sharp cheddar cheese until melted and fully incorporated into the sauce. 
  1. Combine Ingredients:
  • Add the chopped rotisserie chicken and steamed broccoli florets to the cheese sauce, stirring gently to combine. 
  1. Prepare the Pie Crust:
  • Unroll one of the pie crusts and fit it into a 9-inch pie dish. Pour the chicken, broccoli, and cheese mixture into the pie crust. 
  1. Top the Pie:
  • Unroll the second pie crust and place it over the filling.
  • Trim and crimp the edges to seal. Make several small incisions in the top crust to let the steam escape. 
  1. Egg Wash:
  • Brush the top crust with the beaten egg and water mixture to achieve a golden-brown finish. 
  1. Bake:
  • Place in the preheated oven for 30-35 minutes, until the crust turns golden brown and the filling starts to bubble.
  • If the crust begins to darken too soon, cover the edges with aluminum foil. 
  1. Cool and Serve:
  • Let the pot pie cool for a few minutes before serving.
