This Broccoli, Cauliflower, and Cheese Soup is a creamy and comforting dish, perfect for any time of the year. Packed with vegetables and sharp cheddar cheese, it’s both nutritious and delicious. 

Ingredients 

  • 2 tablespoons of olive oil (preferably regular or light, not extra virgin) 
  • 1 cup diced carrots (about 2 medium to large) 
  • 1 cup of chopped celery (approximately 2 large stalks) 
  • 1 cup of chopped onion (around 1 small to medium onion) 
  • Salt and pepper, to taste 
  • 3 tablespoons all-purpose flour 
  • 4 cups water 
  • 4 teaspoons of chicken base (like Better Than Bouillon) 
  • 3 cups fresh broccoli florets 
  • 3 cups fresh cauliflower florets 
  • 1 cup half and half 
  • 2 cups shredded sharp cheddar cheese 

Instructions 

  1. Cook the Vegetables: In a large pot, warm the olive oil over medium heat. Add the chopped carrots, celery, and onion. Cook, stirring occasionally, until the vegetables are soft, which should take about 5-7 minutes. Season with salt and pepper to taste. 
  1. Create the Base: Sprinkle the flour over the sautéed vegetables and stir well to coat. Cook for an additional 2 minutes to remove the raw flour taste. 
  1. Add Water and Chicken Base: Gradually add the water, stirring constantly to prevent lumps. Add the chicken base and stir until fully dissolved. 
  1. Set the Vegetables: Add the fresh broccoli and cauliflower florets to the pot. Heat the mixture until it reaches a boil, then lower the heat and let it gently simmer for 15-20 minutes, or until the vegetables are softened. 
  1. Blend the Soup (Optional): For a smoother texture, use an immersion blender to blend the soup to your desired consistency. Alternatively, you can transfer part of the soup to a blender and blend until smooth, then return it to the pot. 
  1. Add Cream and Cheese: Stir in the half and half and shredded sharp cheddar cheese. Continue to stir until the cheese is completely melted and the soup is creamy. 
  1. Adjust Seasoning: Taste the soup and adjust the seasoning with more salt and pepper, if needed. 
  1. Serve: Serve the Broccoli, Cauliflower, and Cheese Soup hot, garnished with extra shredded cheese or a sprinkle of fresh herbs, if desired.
