Beef Tripe Kare Kare

Ingredients 

  • 2 lbs beef tripe, sliced 
  • 1 piece Knorr Beef Cube 
  • 1 bunch baby bok choy 
  • 15 pieces snake beans, cut into 2-inch pieces 
  • 1 piece Chinese eggplant, sliced 
  • 1 ½ cup peanuts, processed until smooth and creamy 
  • ½ cup annatto seeds 
  • 1 piece onion, minced 
  • 5 cloves garlic, minced 
  • 1 ½ tablespoons glutinous rice flour 
  • 6 cups water 
  • 3 tablespoons cooking oil 
  • Ground black pepper, to taste 
  • Shrimp paste (bagoong alamang), to taste 

Instructions 

  1. Prepare the Annatto Water
  • Soak ½ cup annatto seeds in 1 cup of warm water for about 10 minutes. Stir occasionally. 
  • Strain and discard the seeds, keeping the orange-colored water. Set aside. 
  1. Cook the Beef Tripe
  • In a sizable pot, heat 6 cups of water until it reaches a vigorous boil. 
  • Add the sliced beef tripe and Knorr Beef Cube. Cook until the tripe is tender, about 1-2 hours. 
  • Remove the tripe from the pot and set aside. Reserve the broth. 
  1. Prepare the Peanut Sauce
  • In a blender or food processor, blend the peanuts until smooth and creamy. Set aside. 
  1. Toast the Glutinous Rice Flour
  • In a small skillet over medium heat, toast the glutinous rice flour until it turns light brown. Stir constantly to avoid burning. Set aside. 
  1. Sauté the Aromatics
  • In a big pot, warm up 3 tablespoons of cooking oil over medium heat. 
  • Add the minced garlic and onion. Cook until the onion turns translucent and the garlic releases its aroma. 
  1. Combine Ingredients
  • Add the cooked beef tripe to the pot with the sautéed aromatics. 
  • Pour in the reserved broth and annatto water. 
  • Stir in the creamy peanut mixture and toasted glutinous rice flour. Mix well until the sauce is smooth and thickened. 
  1. Cook the Vegetables
  • Add the sliced Chinese eggplant and snake beans to the pot. Cook gently until the vegetables are soft, approximately 5-7 minutes. 
  • Add the baby bok choy and cook for an additional 2 minutes. 
  1. Season the Stew
  • Season with ground black pepper to taste. 
  • Adjust the consistency of the sauce by adding more water if necessary. 
  1. Serve
  • Serve the Beef Tripe Kare Kare hot with steamed rice. 
  • Accompany with shrimp paste (bagoong alamang) on the side.
