Beef Chop Suey

Ingredients:

  • 1 red pepper, diced 
  • 1 teaspoon fresh grated ginger 
  • 2 garlic cloves, minced 
  • Salt and pepper to taste 
  • 370 g (13 oz) package bean sprouts 
  • 1 cup chicken broth 
  • 1/4 cup soy sauce 
  • 2 tablespoons cornstarch 

Instructions: 

  1. Cook the Ground Beef: 
  • Warm a large skillet or wok over medium-high heat. Add the ground beef and cook until it browns completely and is cooked through. If there’s excess fat, drain it off.  
  1. Prepare the Vegetables: 
  • In the same skillet, add onions, celery, shredded carrot, diced red pepper, fresh grated ginger, and minced garlic. Sauté for 3-4 minutes until the vegetables are tender but still slightly crisp. 
  1. Combine Sauce and Cornstarch: 
  • In a small bowl, whisk together chicken broth, soy sauce, and cornstarch until smooth. 
  1. Simmer with Sauce: 
  • Pour the sauce mixture into the skillet containing the vegetables. 
  • Add bean sprouts and cooked ground beef to the skillet. Stir well to combine. 
  1. Thicken and Season: 
  • Cook over medium heat, stirring constantly, until the sauce thickens and coats the meat and vegetables. Season with salt and pepper to taste. 
  1. Serve: 
  • Take the skillet off the heat and serve the dish hot over steamed rice or noodles.
