Cheesy Cauliflower Muffins

  • 1/4 teaspoon salt (optional, we did not use salt) 
  • 1 lightly beaten large or extra-large egg 

Instructions 

  1. Prepare the Cauliflower: 
  • If using frozen cauliflower rice, cook according to package instructions and let it cool.
  • If using fresh cauliflower, pulse cauliflower florets in a food processor until they resemble rice. Microwave the cauliflower rice for about 5 minutes and let it cool. 
  1. Preheat the Oven: 
  • Preheat your oven to 375°F (190°C). Lightly grease a muffin tin or line it with muffin liners. 
  1. Mix the Ingredients: 
  • In a large bowl, combine the cauliflower rice, diced onion, shredded cheddar cheese, Italian seasoning, and salt (if using). 
  • Add the lightly beaten egg and mix until all the ingredients are well combined. 
  1. Fill the Muffin Tin: 
  • Distribute the mixture evenly among the muffin tin compartments, filling each about three-quarters of the way. 
  • Press the mixture down firmly to ensure the muffins hold together. 
  1. Bake the Muffins: 
  • Place in the preheated oven and bake for 20-25 minutes, or until the muffins are golden brown and firm in the middle.
