These Baked Zucchini Carrot Fritters are a healthy and delicious option, perfect for a light meal or snack. Packed with vegetables and seasoned with fresh herbs, they are gluten-free and pair wonderfully with plain Greek yogurt. 

Ingredients: 

  • Two cups of grated zucchini (approximately two medium-sized zucchinis) 
  • 1 + 1/4 teaspoon fine-grain sea salt, divided 
  • 1/2 cup gluten-free all-purpose flour (or regular all-purpose flour if not gluten-free) 
  • 1 teaspoon baking soda 
  • 1 teaspoon ground cumin 
  • 1.5 cups grated carrot 
  • 1 (15 oz) can chickpeas, drained and rinsed 
  • 3 cloves garlic, minced 
  • 2 eggs, whisked 
  • 1/4 cup of finely chopped green onions (around six stalks or one bunch) 
  • 3 tablespoons lemon juice, freshly squeezed 
  • 2-3 tablespoons chopped fresh dill 
  • Plain Greek yogurt, for serving 

Instructions: 

  1. Prepare the Zucchini: 
  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. 
  • Place the grated zucchini in a colander and sprinkle with 1 teaspoon of sea salt. Allow it to rest for approximately 10 minutes to release any excess moisture. 
  • After 10 minutes, squeeze the zucchini with your hands or a clean kitchen towel to remove as much liquid as possible. 
  1. Prepare the Fritter Mixture: 
  • In a large bowl, combine the drained and squeezed zucchini, grated carrot, and drained chickpeas. Mash the chickpeas slightly with a fork or potato masher. 
  • Add the minced garlic, whisked eggs, diced green onion, lemon juice, and chopped dill to the bowl. Mix well. 
  • In a separate bowl, whisk together the gluten-free flour, baking soda, ground cumin, and the remaining 1/4 teaspoon of sea salt. Add this dry mixture to the vegetable mixture and stir until well combined. 
  1. Form the Fritters: 
  • Take roughly 1/4 cup of the mixture and form it into a patty.  
  • Place the patty on the prepared baking sheet. Repeat with the remaining mixture, spacing the fritters evenly on the sheet. 
  1. Bake the Fritters: 
  • Bake in the preheated oven for 20-25 minutes, or until the fritters are golden brown and firm to the touch. Flip the fritters halfway through the baking time to ensure even cooking. 
  1. Serve: 
  • Remove the fritters from the oven and let them cool slightly. Serve warm with plain Greek yogurt for dipping.
