This Tuscan Salmon with Parmesan Cream Sauce is a rich and flavorful dish that combines tender salmon fillets with a creamy, cheesy sauce infused with sun-dried tomatoes and spinach. Perfect for a sophisticated dinner that’s easy to prepare. 

Ingredients: 

For 1x Recipe: 

  • 1 tbsp butter 
  • 1 tbsp olive oil 
  • 4 pieces salmon fillet 
  • Salt and pepper, to taste 
  • 2 cloves garlic, minced 
  • 3-4 sun-dried tomatoes packed in oil, sliced 
  • 125ml / 1/2 cup dry white wine 
  • 250ml / 1 cup double/heavy cream 
  • 50g / 1/2 cup Parmesan cheese, grated 
  • 30g / 1 cup fresh spinach 

Instructions: 

  1. Prepare the Salmon: 
  • Sprinkle salt and pepper on both sides of the salmon fillets. 
  1. Cook the Salmon: 
  • In a large skillet over medium-high heat, melt the butter together with the olive oil. 
  • Add the salmon fillets to the skillet, skin-side down, and cook for 4-5 minutes on each side, or until the salmon is cooked through and golden brown. Transfer the salmon from the skillet and place it aside. 
  1. Prepare the Sauce: 
  • Using the same skillet, sauté the minced garlic for about a minute until it becomes fragrant. 
  • Add the sliced sun-dried tomatoes and cook for another minute. 
  • Add the dry white wine, stirring to deglaze the pan. 
  • Allow it to simmer for 2-3 minutes, letting it reduce a bit. 
  1. Make the Cream Sauce: 
  • Reduce the heat to medium-low. Pour the heavy cream into the skillet and stir until well combined. 
  • Gradually stir in the grated Parmesan cheese until the sauce is smooth and creamy. 
  • Add the fresh spinach to the sauce, stirring until wilted. 
  1. Combine and Serve: 
  • Return the cooked salmon fillets to the skillet, spooning the sauce over the top to coat. 
  • Let the salmon warm through in the sauce for a couple of minutes. 
  1. Serve: 
  • Serve the Tuscan salmon fillets hot, topped with the creamy Parmesan sauce and accompanied by your favorite side dishes, such as roasted vegetables or a fresh salad.
