Healthy Mini Frittatas 

These Healthy Mini Frittatas are a perfect breakfast or snack option, packed with nutritious ingredients like kale, sun-dried tomatoes, and lean ham or turkey. They are easy to make and great for meal prepping. 

Ingredients:  

For 1x Recipe: 

  • 10 large eggs 
  • 270g / 4 cups kale, chopped 
  • 4 sun-dried tomatoes, chopped 
  • 2 thick slices of ham or turkey, diced 
  • 2 cloves garlic, minced 
  • Salt, to taste 
  • Pepper, to taste 
  • Low-calorie spray for coating muffin pan 

Instructions: 

  1. Preheat the Oven: 
  • Preheat your oven to 375°F (190°C). Lightly coat a muffin pan with low-calorie spray to prevent sticking. 
  1. Prepare the Ingredients: 
  • In a large mixing bowl, beat the eggs until they are thoroughly mixed. 
  • Add the chopped kale, sun-dried tomatoes, diced ham or turkey, and minced garlic to the eggs. Combine thoroughly until all the ingredients are well incorporated. 
  • Season with salt and pepper to taste. 
  1. Fill the Muffin Pan: 
  • Pour the egg mixture into the prepared muffin pan, filling each cup about 3/4 full. This should make approximately 12 mini frittatas, depending on the size of your muffin pan. 
  1. Bake: 
  • Place the muffin pan in the preheated oven and bake for 20-25 minutes, or until the frittatas are set and lightly golden on top. Insert a toothpick into the center, and it should come out clean if done. 
  1. Cool and Serve: 
  • Remove the frittatas from the oven and let them cool in the pan for a few minutes before transferring to a wire rack to cool completely. 
  • Serve warm or at room temperature. They can also be stored in an airtight container in the refrigerator for up to 5 days.
