Ingredients:

  • Potatoes:
  • 1.75 kg (3.5 lbs) of potatoes, such as Sebago (Australia), Russet (USA), or Maris Piper/King Edwards (UK).
  • 1 tbsp cooking/kosher salt (for cooking potatoes)
  • For the Mash:
  • 2/3 cup milk (preferably full-fat/whole milk, but lite is okay)
  • 2/3 cup extra milk (for make-ahead option only)
  • 75g / 5 tbsp unsalted butter, cut into 1cm / 1/2″ cubes
  • 1/2 cup sour cream (or yogurt), full-fat is best
  • 1 tsp cooking/kosher salt (or to taste)
  • Cheese:
  • 1 1/2 cups of freshly shredded mozzarella cheese, tightly packed
  • 1 cup (tightly packed) Red Leicester, cheddar, or other flavored cheese
  • Toppings:
  • 200g / 6 oz bacon (streaky), chopped
  • 1/4 cup green onion, finely sliced

Instructions:

  1. Prepare the Potatoes:
  • Peel and cut the potatoes into even-sized chunks. Put them in a large pot and fill it with cold water until the potatoes are fully submerged.
  • Add 1 tablespoon of cooking/kosher salt.
  • Set the pot over high heat and bring the water to a boil, then lower the heat to a simmer. Cook until the potatoes are very tender, about 15-20 minutes.
  1. Make the Mashed Potatoes:
  • Thoroughly drain the potatoes and place them back in the pot. Let them rest for a minute to let any remaining moisture evaporate.
  • Add the 2/3 cup of milk, butter, sour cream, and 1 tsp of cooking/kosher salt. Mash until smooth and creamy. Adjust the salt to taste.
  1. Mix in the Cheese:
  • Stir in 1 1/2 cups of shredded mozzarella and 1 cup of Red Leicester, cheddar, or other flavored cheese until well combined.
  1. Prepare the Bacon:
  • In a skillet, fry the chopped bacon over medium heat until it becomes crispy. Drain on paper towels.
  1. Assemble the Casserole:
  • Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  • Spread the mashed potato mixture evenly in the baking dish. Sprinkle the cooked bacon and sliced green onions on top.
  1. Make-Ahead Option:
  • If preparing in advance, cover the dish tightly with plastic wrap and refrigerate. Before baking, take it out of the fridge and let it sit at room temperature for 30 minutes.
  • Stir in the extra 2/3 cup of milk to loosen the mixture before topping with bacon and green onions.
  1. Bake the Casserole:
  • Place in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and bubbling.
  1. Serve:
  • Allow the casserole to cool for a few minutes before dishing up. Enjoy this creamy, cheesy delight with your favorite main course.
