Spinach-Mozzarella Grilled Cheese 

Elevate your grilled cheese game with this delicious Spinach-Mozzarella Grilled Cheese. This recipe combines the creamy goodness of mozzarella with the savory taste of sautéed spinach and onions. Perfect for a quick lunch or dinner, it’s a gourmet twist on a classic favorite. 

Ingredients 

  • 1½ tablespoons olive oil 
  • 1 small onion, thinly sliced 
  • 1 clove garlic, minced 
  • 8 oz fresh baby spinach 
  • ⅛ teaspoon salt 
  • ⅛ teaspoon black pepper 
  • 8 teaspoons butter 
  • 8 slices bread (I used Udi’s Gluten Free Omega Flax & Fiber Bread) 
  • 1 cup of shredded mozzarella cheese (I opted for Horizon Organic variety) 
  • 4 teaspoons freshly grated Parmesan cheese, for garnish 
  • Hearty Marinara Sauce, either store-bought or homemade (I used my Chunky Pizza Sauce recipe from the Pizza Burgers post). 

Instructions 

  1. Cook the Onions and Garlic: In a spacious skillet, warm the olive oil over medium heat.  Add the thinly sliced onion and sauté until softened, about 5 minutes. Stir in the minced garlic and cook for another minute, until it becomes aromatic. 
  1. Cook the Spinach: Add the fresh baby spinach to the skillet, a handful at a time, stirring until wilted. Season with salt and black pepper. Once all the spinach is wilted, remove from heat and set aside. 
  1. Prepare the Bread: Spread 1 teaspoon of butter on one side of each slice of bread. 
  1. Prepare the Sandwiches: Arrange 4 slices of bread, buttered side facing down, on a clean countertop. Evenly distribute the sautéed spinach mixture over the 4 slices. Top the spinach mixture with a layer of shredded mozzarella cheese. 
  1. Top the Sandwiches: Place the remaining 4 slices of bread on top of each sandwich, buttered side up. 
  1. Grill the Sandwiches: Warm a large skillet or griddle over medium heat. Add the sandwiches and cook until the bread turns golden brown and the cheese is melted, approximately 3-4 minutes on each side. You may need to cook the sandwiches in batches depending on the size of your skillet. 
  1. Garnish and Serve: Once the sandwiches are cooked, sprinkle freshly grated Parmesan cheese on top for garnish. Serve immediately with a side of chunky marinara sauce for dipping.
