  • 1 tablespoon extra virgin olive oil, plus extra for drizzling 
  • 1 garlic clove, grated or pressed 
  • Salt and black pepper, to taste 

Instructions: 

1. Cook the Pasta: 

  • Boil a large pot of salted water. 
  • Prepare the pasta as per the package instructions until it is al dente. 
  • Reserve approximately 1 cup of pasta water, then drain the pasta and set it aside. 

2. Prepare the Ricotta Mixture:
