Creamy Coconut Mango Rice Delight

  • ⅓ cup golden raisins 
  • ⅓ cup red onion, chopped 
  • 2 tablespoons butter 
  • 1 cinnamon stick 
  • ¼ cup orange juice 
  • ½ cup unsweetened coconut milk 
  • 1¾ cups water (plus more as needed) 
  • 1 cup rice 
  • ¼ teaspoon kosher salt 
  • 1 green onion, finely sliced (for garnish) 

Instructions: 

1. Prepare the Ingredients: 

  • Remove the mango skin and chop it into 1/2-inch cubes. 
  • Chop the red onion finely. 
  • Finely slice the green onion for garnish. 

2. Cook the Mango and Raisins: 

  • Warm the olive oil in a medium saucepan over moderate heat. 
  • Add the diced mango and golden raisins to the pan. Sauté for about 2-3 minutes until the mango starts to soften. 

3. Add the Aromatics: 

  • Add the chopped red onion to the pan and sauté for another 2 minutes until the onion becomes translucent. 
  • Stir in the butter and let it melt, then add the cinnamon stick. 

4. Cook the Rice:
