Chicken Chop Suey

Ingredients: 

  • 400g (14oz) boneless, skinless chicken thighs, sliced into bite-size chunks 
  • 455g (1lb) raw bean sprouts 
  • 100g (3.5oz) carrots, sliced into thin strips 
  • 1 clove garlic, finely chopped 
  • 1 knob fresh ginger, thinly sliced 
  • 5 spring onions, diagonally sliced into strips 
  • Thinly slice 1 red bell pepper 
  • 1 yellow bell pepper into strips. 
  • 100g (3.5oz) snap peas or snow peas 
  • 3 tablespoons soy sauce 
  • 2 tablespoons oyster sauce 
  • Combine 1 tablespoon of cornstarch with 2 tablespoons of water to create a thickening agent for the sauce. 
  • 2 tablespoons vegetable oil (for stir-frying) 
  • Salt and pepper to taste 
  • Cooked rice or noodles (optional, for serving) 

Instructions: 

  1. Prepare the Chicken and Vegetables: 
  • Warm 1 tablespoon of vegetable oil in a large skillet or wok, heating it over medium-high heat. 
  • Add the sliced chicken thighs and stir-fry until they are browned and cooked through.  
  1. Stir-Fry the Vegetables: 
  • If necessary, add another tablespoon of vegetable oil to the same skillet. 
  • Stir-fry the garlic and ginger for about 1 minute until fragrant. 
  • Add the sliced carrots, bell peppers, snap peas, and bean sprouts. If necessary, add another tablespoon of vegetable oil to the same skillet. 
  1. Combine and Season: 
  • Return the cooked chicken to the skillet with the stir-fried vegetables. 
  • Combine soy sauce and oyster sauce in a small bowl. Drizzle the sauce over the chicken and vegetables in the skillet. Stir to combine evenly. 
  1. Thicken the Sauce: 
  • Stir the cornstarch mixture again to ensure it is well combined, then pour it into the skillet. 
  • Stir gently until the sauce thickens and coats the chicken and vegetables. 
  1. Serve: 
  • Take the skillet off the heat and sprinkle sliced spring onions over the dish as a garnish. 
  • Serve hot over cooked rice or noodles, if desired.
