  • 1/2 cup grated hard cheese (like Parmesan)
  • 2 large eggs
  • 2/3 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 red pepper, finely diced
  • Greek yogurt, for serving
  • 2 cucumbers, finely diced, for serving
  • 3 olives, sliced, for garnish
  • 1 clove garlic, minced

Directions:

  1. Prep Ingredients:
    • Squeeze the excess moisture from the grated zucchini and potato using a clean kitchen towel or a sieve. This is crucial to prevent the muffins from becoming too soggy.
