Ingredients
- 3 medium zucchini (about 4 cups grated zucchini)
- 2 large eggs
- 2 cloves garlic, minced

- 3 cups shredded mozzarella, divided
- ½ cup freshly grated Parmesan
- ¼ cup cornstarch
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- Pinch of crushed red pepper flakes
- 2 teaspoons freshly chopped parsley
- Marinara sauce, for dipping (use sugar-free if following a keto diet)
Instructions

Preheat & Prepare:
- Preheat your oven to 425°F (220°C).
- Line a baking sheet with parchment paper.

Grate & Drain Zucchini:
- Grate the zucchini using a box grater or a food processor.
- Transfer to a clean kitchen towel or cheesecloth and squeeze out all excess moisture.

- In a large bowl, combine the grated zucchini, minced garlic, dried oregano, 2 cups of shredded mozzarella, Parmesan, cornstarch, and eggs.
