- 8 cups of finely shredded or delicately sliced purple cabbage
- 1 just-barely-ripe but still firm mango peeled and thinly sliced
- ½ to 2 fresh jalapeño peppers stems and seeds removed, then minced (adjust for desired spice level)
- ⅓ cup packed fresh cilantro leaves
- ¼ cup finely chopped or minced red onion
- Juice of 2 limes
- 2 teaspoons mild honey
- 1 teaspoon kosher salt
In a large mixing bowl, combine the shredded purple cabbage, sliced mango, minced jalapeño, cilantro leaves, and red onion.
In a small bowl, whisk together the lime juice, honey, and kosher salt until well blended.
Pour the lime dressing over the slaw ingredients and toss thoroughly to coat.
