Ingredients
  

  • 8 cups of finely shredded or delicately sliced purple cabbage
  • 1 just-barely-ripe but still firm mango peeled and thinly sliced
  • ½ to 2 fresh jalapeño peppers stems and seeds removed, then minced (adjust for desired spice level)
  • cup packed fresh cilantro leaves
  • ¼ cup finely chopped or minced red onion
  • Juice of 2 limes
  • 2 teaspoons mild honey
  • 1 teaspoon kosher salt

Instructions
 

  • In a large mixing bowl, combine the shredded purple cabbage, sliced mango, minced jalapeño, cilantro leaves, and red onion.
  • In a small bowl, whisk together the lime juice, honey, and kosher salt until well blended.
  • Pour the lime dressing over the slaw ingredients and toss thoroughly to coat.
  • Adjust salt and honey as desired, serve immediately, or refrigerate to allow flavors to meld before serving.
