Ingredients
  

For the Salad:

  • 2 pounds boiled or steamed shrimp peeled and deveined
  • 2 avocados cut into large chunks
  • 2 tablespoons red onion finely diced

For the Dressing:

  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1/2 teaspoon garlic powder
  • 1 teaspoon fresh parsley finely chopped
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions
 

  • Prepare the shrimp: If not already cooked, boil or steam the shrimp until tender (about 3-4 minutes for fresh shrimp). Drain and let cool. Peel and devein if needed.
  • Chop the ingredients: Cut the avocados into large chunks and dice the red onion.
  • Make the dressing: In a small bowl, whisk together the olive oil, red wine vinegar, garlic powder, parsley, Dijon mustard, salt, and pepper until well combined.
  • Assemble the salad: In a large bowl, combine the shrimp, avocado, and diced red onion. Pour the dressing over the salad and gently toss everything to coat, ensuring not to mash the avocado.
  • Serve immediately: For best results, serve the salad fresh. It’s perfect as-is, but you can also pair it with some toasted bread or leafy greens for extra texture.
